Spaghetti Squash Lasagna

Spaghetti Squash Lasagna - it is a "fake" lasagna, since there are no noodles. It is gluten-free and much lower in carbs then a regular lasagna, but still hearty and delicious!
Ingredients:
  • 1 spaghetti squash
  • 2 Tablespoons olive oil
  • 1 large white onion, chopped
  • 2 cloves of garlic, minced
  • 1.5 lbs. sausage (turkey or pork)
  • 1 28-oz. can crushed tomatoes in tomato puree
  • 1 6-oz can tomato paste
  • 1/4 cup chopped flat leaf parsely
  • 1/2 cup chopped basil
  • salt and pepper
  • 15-oz. ricotta cheese
  • 4 oz. creamy goat cheese
  • 1 cup grated parmesan, plus 1/4 cup for topping
  • 1 egg, beaten
  • 1 lb. thinly sliced mozzarella cheese
