Taco Pasta Bake - this was very good. My recommendations are to use Hot and Spicy taco mix! Add some Jalapeno cornbread and it is definitely yummy!
  • 1 pound of pasta (any style) 
  • 1lb of lean ground meat (any kind). I used ground chicken.
  • 1 medium onion chopped
  • 2-3 cloves of garlic minced
  • 2-3 Tbs of Taco seasoning

General Tso’s Chicken Recipe

This General Tso’s Chicken Recipe takes a little bit of time but it is pretty simple. The thing I liked about this recipe, is that, it doesn’t call for the dried red chili peppers. We live in a small town, and it was impossible to find these in the store. This recipe is very popular in the Asian buffets and I had to give it a try. You can use the red pepper flakes to turn up the heat as much as you would like. I used a deep fryer to fry the chicken, which worked out very well, but if you don’t have a deep fryer; I am sure a frying pan or a wok would work just as well. Serve Generals Tso’s Chicken over rice and its like bringing part of the Asian Buffet home. Enjoy
- 1 pound boneless, skinless chicken breasts, sliced into 1-inch cubes
- 1 1/2 cups cornstarch
- 1/4 cup salt
- 3 teaspoon freshly ground black pepper
- 3 cups vegetable oil for frying, plus 1 tablespoon for stir-frying
- 5 dried red chilis, roughly chopped
- 2 tsp minced garlic
- Scallions, green parts thinly sliced, for garnish

- 1 tablespoons soy sauce
- 1 tablespoon Chinese rice wine or dry sherry
- 2 egg whites

- 1/4 cup chicken stock or broth
- 1 1/2 tablespoons tomato paste
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon hoisin sauce
- 1 teaspoon chili paste (I didn’t have this, so I substituted 2 tsp cayenne pepper and red pepper flakes)
- 1 teaspoons sesame oil
- 1 tablespoon sugar
- 1 teaspoon cornstarch

These potatoes are so easy to make, a really great addition to any meal. I think it brings the meal up a notch...just because they are so delicious and yet different. They are perfect for an appetizer as well.

Zucchini Boats - Cut a zucchini in half lengthwise - Scoop out the center - Brush the surface with a mixture of crushed garlic, olive oil, salt and pepper - Arrange halved grape tomatoes into the grooves, sprinkle with bread crumbs and bake in a 350 degree oven for about 30 minutes - Remove and place diced fontina or mozzarella in between the tomatoes, under the broiler til golden and bubbling

Texas Flour Tortillas. I have made these sevral times and the fam loves them. Does not follow the tradition of using lard. These are very fluffy and remind us from the torts in San Antonio, Alamo Cafe. , (although nothing is as good as those..)
