Summer Pasta Salad (No Mayo)

A pasta salad with NO MAYO. Not everyone likes mayo. Make this a healthier version by using fat-free or low-fat sour cream, jazzed up with fat-free french dressing and seasoned salt. LOVE this.
Ingredients:
5 cups cooked small shell pasta (approximately 3 cups dry)

3/4 cup diced raw carrots

1/4 cup diced onion

8 oz. (1 1/2 cup) mini-cubed ham

1 (8 oz) package (1 1/2 cups) frozen peas

1/2 teaspon salt

1/8 teaspoon pepper

16 ounce container light sour cream

1/2 cup french dressing

1/2 tablespoon Lawry’s seasoned salt

1 cup shredded colby-jack or cheddar cheese

Optional:  diced celery, diced green pepper

Sweetie Pies

Sweetie Pies make the perfect little homemade Valentine treat! I’ve always loved using pie crust to make delicious treats and these are a favorite, for sure!

1 batch pie crust
1 jar raspberry jam (or any jam you love)

Instructions

To begin, prepare your favorite pie crust. Roll it out in thin strips to cut with a heart cookie cutter.
Add a dollop of seedless raspberry jam to the center of each heart.
Moisten the edge of the heart with water, all around, and cover with another heart cut-out.
Softly press top edge down onto bottom edge, forming a seal, and press sealed edges together with fork tines, all around.
Prick center of each little pie with fork tines and place on a parchment-lined baking sheet. Bake at 425 degrees for 15 minutes, or until lightly browned.
Remove from oven and cool on a wire rack. You can dust them with powdered sugar: Serve warm or at room temperature.

I love Olive Garden's Chicken & Gnocchi Soup but I don't really like having to go out to dinner to get it. This homemade version tastes amazing and you can control what's in it. It's perfect to pair with a big salad and bread and you can have your own "Soup, Salad, & Breadsticks" night at home!

  • 1/2 cup (1 stick) unsalted butter 
  • 3/4 cup celery, chopped fine

West Virginia Pepperoni Rolls

Pepperoni rolls can be greasy and dry with barely enough pepperoni to go around. For starters, we microwaved the pepperoni to get rid of some of the oil that was puddling in the baked roll and then saved some of the oil to soften and season the dough.

The BEST part about this recipe was that I could throw it all together the night before and wake up to a fully prepared hot breakfast. So very very convenient. Plus it made the house smell wonderful and waking up to anything with even a hint of bacon smell is fabulous.

  • - 1/2 cup onions – diced

  • - 1 tsp salt & 1/2 tsp of pepper (I am recommending an additional pinch of salt and pepper for each layer of hash browns)

I love to bake, and cakes are a favourite in our home. Often though, I find myself sawing off the 'lumpy' top of the cake to get a nice, flat surface to put the icing on. Well, no longer! Stuffed Pizza Rolls

These pizza rolls jumped right out at me. They sounded delicious and seemed easy to put together. I decided to make half sausage for Joe, and the other half broccoli for me and the babies. All four of us enjoyed these pizza rolls - they are garlicky and cheesy and perfect for dipping in pizza sauce. This would be a fun meal for a casual get-together or a weekend lunch, and kids would definitely enjoy helping make them. You can do any combination of fillings and come up with something everyone will love.


Ingredients:



  • 1 batch pizza dough (store-bought or homemade)
  • Choice of fillings (shredded or cubed cheese, meats, vegetables)
  • 1 T. olive oil
  • 1 tsp. garlic powder
  • 2 T. Parmesan cheese
  • Pizza or marinara sauce (for dipping)

Instructions


Preheat oven to 375 degrees. Spray a 9 or 10-inch pie plate with cooking spray.

Lightly flour a clean working surface. Roll out the dough to about 1/4 -inch thickness. (If using canned pizza dough, just unroll it to the pre-cut size and shape.)

Cut the dough into long strips, about 2 inches wide.

Cut each strip into squares, about 2 inches across.

Place a small amount of filling in the center of each square (about 1 tablespoon of filling per each square). Make sure any pre-cooked filling has cooled to room temperature before using it.

To form the rolls, pinch together the corners of each square, taking care to keep all of the filling tucked inside.

Place the rolls in the prepared pie plate, working your way from the outside in.

When the pie plate is full, brush olive oil over the top of the rolls, followed by the garlic powder and Parmesan cheese.

** If you have time, let the rolls rest for 10 minutes before baking. This will give the dough a little time to rise, causing the rolls to puff up and fill in any empty spaces between them. If you are in a hurry, go ahead and pop them in the oven right away. They will still be just as tasty.

Bake for 10 to 20 minutes, or until golden brown.

Serve hot with sauce on the side for dipping.

Christmas Thumbprint Cookies

The below recipe incorporates the Christmas colors of red and green. A touch of almond extract adds a unique and delicious taste.


Ingredients:

  • 2 cups Butter
  • 1 cup Sugar
  • 4 Egg Yolks
  • 4 teaspoon Vanilla
  • 5 cups Flour
  • 1 teaspoon Salt
  • Thumbprint Icing 1 cup Confectioners Sugar
  • 1 tablespoon Water
  • Colors for icing

  • Preheat your oven to 350 degrees. 

  • Put your butter and your sugar in a mixing bowl. Cream until fluffy. Add your egg yolks and mix in. Add vanilla and mix. 

  • In a seperate bowl, mix your flour and salt.  Add your dry ingredients to your wet ingredients and mix together.

  • Once your mix is together, start making small 1"-1 1/2" balls of dough. Place the dough balls on your cookie sheet. Bake for 10-12 minutes. The bottoms will be golden brown. The tops are a little tougher to see, but they will be done if the bottoms are. Immediately after pulling the cookies out of the oven, use the back of a measuring spoon to make a round indention in each cookie.

  • For the icing, mix together your confectioners sugar and 1 tablespoon water. If you need more water, add some, but don't make the icing too runny.  Divide the icing into two bowls and add color until you get the color you are looking for.  Use a spoon to fill your cookies with icing.

Ingredients:
  • 2 9-inch (22.5cm) pie crust doughs
  • Favorite pumpkin pie filling recipe

Things You'll Need

  • Medium or large bowl
  • Muffin tin
  • Mini muffin tin
  • 4-inch (10.16 cm) round cookie cutter or bowl
  • 2 1/2-inch (6.35 cm) round cookie cutter (for mini muffin tin usage)

Instructions

  • Preheat the oven to 425ºF/220ºC.
  • Use a cookie cutter to cut out 12 4-inch (10.16 cm) round circles. Carefully insert the circles into the individual holes of the muffin tin. Score the bottom of each dough circle with a fork.
  • Create the pumpkin pie filling in a medium or large bowl. Use your usual pumpkin pie filling recipe.
  • Pour the pumpkin pie filling into each dough circle, to the top.
  • Place the pies in the oven. Bake at 425ºF/220ºC for 15 minutes.
  • Reduce the oven temperature to 350ºF/180ºC and continue baking for an additional 25 to 30 minutes. This is about 15 to 20 minutes less than a regular pie because of the much smaller size per mini pie.
  • Remove the mini pumpkin pies from the oven when cooked. Allow the pies to cool on a cooling rack for a few hours.
  • Serve. Enjoy with whipped cream.

Tips


  • Instead of 12 muffin size pies, this recipe can easily be divided between a 6-count muffin tin, a 12-count mini muffin tin, and still would have a good amount leftovers for a regular size graham cracker crust pie.
  • When using mini muffin tins, bake the pies at 350ºF/180ºC for 12 to 15 minutes[1] and use a 2 1/2-inch (6.35 cm) cookie cutter for the dough. If you are using both muffin tin sizes, use the following temperatures and timings:
  • Bake the regular muffin tin at 425ºF/220ºC for 15 minutes.
  • Reduce to 350ºF/180ºC for 15 minutes.
  • Add the mini muffin tin and continue baking both tins at 350ºF/180ºC for 13 minutes.
